Le Ciammelle (Ciambelle) sono tradizionali in molte parti dell'Italia. A Supino se ne facevano di molti tipi e anticamente si vendevano infilzate a un bastone durante le feste o le fiere, (da questo la forma). Celebre a Supino e a Patrica e' il fatto che quando si faceva la processione di San Rocco se ne metteva una filza nelle mani del Santo e una in bocca al cane che gli sta ai piedi. Le cosiddette "ciammelle du San Rocco" dopo la processione venivano benedette e distribuite ai poveri. Le ciambelle sciroppate, invece, insieme a un cucchiaio di confetti e ad altri tre pezzi di dolce venivano dati negli sposalizi (quello che oggi e' la bomboniera). English

These ring shaped cookies are common in all of Italy.
There where, and still are, many types. In olden times they were sold during festivals or fairs, strung in walking canes (that it is why they are ring shaped). They wee famous in Supino and Patrica because during the festivities in honor of San Rocco a string of ciammelle (lu ciammelle du San Rocco) was placed (hung) at the saint left hand and one in the mouth of his dog, (in very special occasions a small string of them around its neck). After the procession and the blessing the "ciammelle benedette" were distributed to the poor (while the dog kept his).

Also "sciroppate" together with one "'mbriachella", one spoon of confetti and two more pieces of pastry (5 types in total) were given at weddings (the equivalent of today's "bomboniere", (from the French "bonbon", sweets or candies").

Ciammollitti Magri (Ciambelle Magre)

Ingredienti:

3 uova,
1 litro di vino bianco,
400 grammi di zucchero,
200 grammi di olio,
2 bustine di lievito per il pane,
1-2 cucchiaini di seme di anice,
un pizzico di sale e farina.

Attivate il lievito secondo le istruzioni sulla bustina.
Sbattete insieme tutti gli ingredienti meno che la farina.
Aggiungete la farina ammassandola fino a che viene dura piu' del pane.
Lasciate che la pasta ricresca fino a che si raddoppia di volume.

Formare le ciambelle da immergere in acqua quasi bollente.
Quando ritornano a galla mettetele ad asciugare su una tovaglia.

Infornate a 180 gradi centigradi su una grata o teglia.

Ciambelle Magre (lowfat)

Ingredients:

3 eggs
1 liter of dry white wine
400 grams of sugar
200 grams of vegetable oil
2 envelopes of yeast
2 teaspoons of anise seeds
a pinch of salt, flour as needed

Follow the package directions to activate the yeast
Whip the eggs, wine, sugar, oil, yeast preparation, anise seeds and salt
Add the flour slowly, working the flour until it has the same consistency as bread dough
Let the dough rest until it doubles in volume
Form ring shape ciambelle and immerse in almost boiling water
When the rings raise to the surface, remove from the water and let drain on a table cloth
Bake in a 180 centigrade (350 F) degrees oven until golden brown.

Ciambelle Sciroppate

Ingredienti:

10 uova,
10 cucchiai di olio,
Farina e zucchero.

Sbattete le uova e l'olio e aggiungete la farina che deve essere impastata lenta e per lungo tempo (1-2 ore).
Se si attacca ungetevi le mani con un po' di olio.
Lavorate la pasta fino a che non comincia a crescere.
Notate che per assenza di lievito e di zucchero ci vuole parecchio tempo.
Formare le ciambelle da immergere in acqua quasi bollente.
Quando ritornano a galla mettetele ad asciugare su una tovaglia.
Praticate un taglio lungo la circonferenza e infornate a 180 gradi centigradi.
A cottura avvenuta tiratele fuori dal forno e fatele raffreddare.

Fate lo sciroppo mettendo in un tegame dal bordo alto 2 manciate di zucchero e mezzo bicchiere di acqua, sciogliendo sul fuoco lentamente.
Fate saltare alcune ciambelle nel tegame, toglietele e mettetele ad asciugare su una teglia.
Ripetete fino alla fine delle ciambelle

 

Ciambelle Sciroppate

Ingredients:

10 eggs
10 tablespoons of vegetable oil
Sugar and flour

Beat eggs and oil. Slowly add the flour to a loose consistency, work the dough slowly and for a long time (approximately 1-2 hours).
If the dough sticks to your fingers, wet your hands with a little oil.
Work the dough until it starts to rise.
Make note: because there is no yeast or sugar the dough must be worked for a long time.
Form the ciambelle rings and place the rings in almost boiling water.
When the rings raise to the surface, remove and drain on a table cloth.
Make a cut in the circumference of the ring.
Bake in a 180C (350F) degrees oven until golden brown, remove and let cool.

Make a syrup in a metal bowl (preferably a copper bowl) by taking two and a half handfuls of sugar and half a glass of water, stir over at low temperature until clear
Toss 2-3 ciambelle at a time in the syrup and put on a rack to dry, repeat as needed.

Ingredienti:

Ricetta popolare

Massa per il pane (gia' pronta che si compera al forno) e seme di anice.

Riammassate la massa aggiungendo il seme di anice (per un chilo di massa due cucchiaini di seme di anice).
Stendete la massa fino a che non e' circa 1 centimetro di spessore.
Tagliate a striscie lunghe circa 40 centimetri e larghe circa 4 centimetri.
Attorcigliate a piacere e formate la ciambella chiudendone i capi.
Passatele in acqua quasi bollente fino a che non tornano a galla, tiratele fuori e mettetele ad asciugare su una tovaglia.
Infornate a 180 gradi centigradi per 20-30 minuti.

Prepared dough (from the bakery),
Anise seeds.

Re-work the dough adding a tea spoon of anise seeds per pound.
Roll the dough to approximately 1/2 inch thick.
Cut in strips 16' long and 4" wide.
Twist the strips and close the ring.
Put in boiling water until they rise.
Take out of the water and lay on a tablecloth to drip dry.
Bake at 360 F for 20-30 minutes.
